Almond Wellingtons

Traditional almond paste based cookies.

Ingredients

2.000 gr Damco almond ‘wellington’
190 gr Egg white

  1. Soften the almond cookie paste with the egg white.
  2. Pipe the almond cookie paste onto baking paper in a horseshoe shape and press 2 half almonds into the cookie.
  3. Lift the baking paper and place it upside down in coarse sugar before baking.
